The bergamot is the fruit of the bergamot tree, it is thought to have appeared in Italy from a cross between a bitter orange and a lime. Its flesh is not usually eaten alone because it is very bitter.

Bergamot delights perfumers with its sweet, tangy and sparkling scent. The harvest of this fruit takes place between December and February, when its peel turns yellow under the effect of low temperatures.

It is a rare ingredient because of its harvesting by hand and the need for a very large quantity of fruit for a small amount of essence: 200 kilos of fruit are needed to obtain 1 kilo of essence.
